My boys are huge waffle eaters- they absolutely love them! So we were SO on board with Krusteaz and their “brinner” night. Wednesdays works great for us to have an easy night where we know what type of food we’re having for dinner- BREAKFAST! Mornings are often rushed, and I don’t always get the time to make them pancakes or waffles during the week. An easy solution? Make it for dinner!

We used this easy recipe/variation from Krusteaz’s website. They have TONS of great recipe ideas, make sure you check them out! We didn’t use the garnish’s, as I knew my boys wouldn’t go for that. But if yours will, more power to you!

Lemon Buttermilk Waffles

Prepare Krusteaz Belgian Waffle Mix as directed for 4 – 5 waffles, adding 2 teaspoons finely grated lemon zest and 1/4 cup buttermilk. Garnish with whipped cream, lemon zest and fresh blueberries.
